Real Food Recipe: Spicy Meatballs

  • 3 tsp. coconut oil
  •  1 lb. grass fed ground beef
  • 3 chipotle chilies, deseeded and ground up in a food processor
  • 2 minced garlic cloves
  • 1 tsp. coriander
  • 1 tsp. cumin
  • 1 tsp. paprika
  • 1 tbsp. olive oil
  • ½ chopped white onion

 


And for the sauce:

  • ½ chopped white onion
  • 2 minced garlic gloves
  • 2 chipotle chilies, deseeded and ground up in a food processor
  • ½ tsp. coriander
  • 1 tsp. cumin
  • ½ tsp. paprika
  • 2 bay leaves
  • 1 ½ cups diced Roma tomatoes, pureed in a blender
  • ½ tsp. salt

 

Directions:

  • Melt 1 tsp. coconut oil in a pan over medium heat. Then add in all the onions. Once they’ve become translucent, put half in one bowl and half in another.
  • In the first bowl, make your meatballs. Add your meat, 3 ground up chilies, paprika, cumin, coriander, salt and olive oil. Mix well with your hands, and mold into small balls. Place these on a place and set aside.
  • Next, add 2 tsp. of coconut oil to the pan and turn on medium-high heat. Once hot, place the meatballs into the pan, cooking each side about 3 minutes each. They should be browned all over when finished.
  • Now add the remaining onion, tomato puree, garlic, chilies and spices to the pan. Mix thoroughly, being sure to coat each meatball well. Then, cook for about 10 minutes on low heat.
  • Finally, serve it hot. You can even add a little dash of lime juice or cilantro for an extra kick.

 

This dish goes great a few slices of avocado or even atop a fresh spinach salad. If you’re not a fan of spicy foods, just remove one of two of the chilies from the recipe, and you’ll be good to go. Bon appetit!
