Real Food Recipe of the Week: Sweet Potato Waffles

divini rae wafflesFlour-filled waffles doused in butter and sugary syrup aren’t great for our health, and  if you’re like me, you closely monitor what you put in your body. Which of course makes waffles a definitely NO on your weekly menu.

The other day I thought: “Wait a minute. There has to be a way to make a healthier version of waffles.”

And with that (and a little creativity), I concocted a delicious veggie-based waffle that’s both good and good for you. 🙂

Here’s what you need to make it at home:

  • 1 pound peeled sweet potatoes, grated 
  • 2 eggs
  • 2 tbsp. melted coconut oil
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ¼ tsp. cloves


  • Mix your ingredients together in a large bowl, and make sure everything is combined thoroughly. If it’s not, it could affect the taste.

  • Next, plug in your waffle maker, and place a few spoonfuls of your mixture in the center. Close the lid, and when both sides are crispy, remove with tongs. 

  • Continue doing this until all your batter has been used up, and then serve your waffles hot.

If you’re missing the syrup, you can always drizzle a small amount of warmed organic honey over the top. Unsweetened applesauce works well, too. You can also include blueberries or strawberries in your batter if you have a real sweet tooth.

These waffles are the perfect New Year’s Day breakfast. 🙂
