Veggie Frittata – Fast-Easy-Healthy – Easy Vegetarian Recipes!

Preheat oven to 400 degrees F.

*  Use whatever veggies you like most. I like asparagus, mushrooms, zucchini and chopped basil. Cook fresh asparagus spears in a pot of boiling water for 8 to 10 minutes or until crisp-tender; drain in colander. Reserve 3 spears for garnish; cut remaining asparagus into 1-inch pieces. Sauté the veggies in a sauté pan.

* In a medium mixing bowl beat 6 eggs until foamy. Add a little mustard, salt, and pepper, cooked veggies, and mix. Spray a muffin pan with coconut oil spray.

*  Bake frittata uncovered, in a 400 degree F oven about 10 minutes or until set. Garnish with asparagus.
